I have been planning to make my own granola for a good long while now. What has partly put me off is that there are so many good-sounding recipes to choose from. So in the end I took the bits I liked from the various recipes and had a go.
I toasted small handfuls of unsalted peanuts, sunflower seeds, pumpkin seeds, walnuts, almonds, and unsweetened shredded coconut. In another bowl I mixed jumbo oats with some golden syrup, honey and a small amount of groundnut oil. Once the nuts and seeds were toasted (about 10 mins under the grill stirring constantly) I added this to the oat mixture and spread it on a big baking tray. This is where I got slightly confused between the different recipes I had read as I started by grilling the mixture but then had a thought that maybe oven-ing would be better so switched over to that. I think next time I will 'oven' for the whole time! I was keen not to use butter and not add too much sweetness or oil but never the less it turned out very tasty! I hope that it will be a good incentive to get up early all next week on those dark mornings we have at the moment.
